Gassy & Good Three Bean Chili

(this version is veggie but you are free to add ground beef. I would have but I was serving to vegetarians. Stupid vegetarians)

1 15oz can black beans (drained)
1 15oz can dark red kidney beans (drained)
1 15oz can light red kidney beans (drained)
1 15oz can corn kernals (drained)
2 onion - diced
2 cloves garlic - minced
2 pkgs frozen sliced peppers (red, green, yellow)
1 28oz can diced tomatoes (reseve juices)
1 6oz can hot tomato paste
1 envelope chili spices (Lawrey's or whatever your store stocks)
1 chipotle pepper & some adobo sauce - diced

Process:
In a large pot heat a few Tbs of oil,
Saute onions until golden brown,
Add pepper slices & saute until soft,
add all other ingredients and stir.

If moisure is needed add tomatoe juice + water to the amount recommended on spice packet.

Bring to a boil then simmer until serving (about 45min - 1hr). Garnish with sour cream, shredded cheese & diced red onions.

I believe I got 8 full servings out of this.
