Quick & Easy Red Beans & Rice

(not product placement, it's just what we had at the local market)

Slice 1 pack of sausage in 1/4in. rounds, saute in pan until they begin to brown. Remove from pan.

Saute 1 onion (diced) & 1-2 green bell peppers (diced) & 3-5 cloves of garlic (minced) in the oil rendered from sausage.

Return sausage to pot, add 2 cans diced tomatoes & 2-3 cans dark red kidney beans.

Bring to a boil, reduce heat to simmer for up to 2hrs.

Serve over rice. Season with preferred hot sauce to taste.

That company has the BEST chicken and turkey sausages. I even bought a few packages from the US and Sweden and promptly froze them.

For me, I will chop up one sausage and use it in scrambled eggs, crepes, or even pasta.
